Private walking tour of Seville World Heritage Sites and of the Palace of the Countess of Lebrija in the morning and flamenco and tapas tour in the evening
–
9:30am: be met by your personal local guide at your hotel in Seville to start a private walking tour that will take you to the three world Heritages Sites of the city (the Cathedral, the Alcazar and the Archive of the Indies) and also to the Palace of the Countess of Lebrija. This will make a great introduction to your stay in the city as it will set its historical context and show you its most remarkable buildings.
You will start your discovery journey by visiting the Alcazar which is a massive complex of palaces erected in different periods and of breath-taking gardens of different styles. The Alcazar has stunning historical constructions featuring a very particular crossover between Hispanic-Muslim and Christian architecture styles, called Mudejar. This style became very fashionable in Spain in the 14th and 15th centuries amongst the Christian nobility and it reached its maximum splendour in Seville. Another essential part of the Alcazar is the famous house of Trade, which once hosted the offices from where all the commerce with the new world was managed. After enjoying these inner areas, you will be taken to the gardens which are an exquisite sample of European gardening from the 16th until the 20th centuries.
Then you will be taken to visit the Cathedral, which is the largest gothic temple in the World and where Christopher Columbus is buried. The Cathedral of Seville was built on a vast extension of land where previously a Mosque had been erected. An important part of the Mosque was preserved and it is now a part of the Cathedral. This makes it a unique construction featuring styles as diverse as Hispanic-Muslim, Gothic, Renaissance, Neoclassical and Baroque. A most important part of the Cathedral is its bell tower known as la Giralda. During your tour you may want to climb up its 36 ramps to get to the top and enjoy the wonderful views of Seville that it offers.
Then you will visit the Archive of the Indies, a majestic Neoclassical building which treasures the vast majority of the documents compiling the history of those years when Seville held the monopoly of all trade with the New World.
From the Archive of the Indies you will walk towards the Palace of Countess of Lebrija, probably the most impressive sample of domestic architecture that Seville has. A breath-taking mudejar residence, this palace also treasures a unique collection of original Roman mosaics and archaeological artifacts of different periods, collected from different regions in Andalusia by the Countess herself.
2pm: after your tour, you may want to be escorted back to your hotel or be given some orientation to enjoy lunch at leisure.
6:30pm: be met by your personal local host by the reception desk of your hotel to start a guided walk towards the quarter of Triana, aimed at learning about the origins of flamenco music in this former suburb of Seville and also about its evolution throughout the centuries. This will set the context for (and enhance your appreciation and enjoyment of) the flamenco performance in a small and intimate venue that will follow, with 4 people on stage (one singer, one guitarist and two dancers).
7:30pm: start of the flamenco performance.
8:30pm: after your flamenco performance, enjoy a tapas tasting tour through the quarter of Triana. Along the journey, you will learn about and enjoy this genuinely Spanish approach to enjoying a meal. Your tour will take you to 2 – 3 selected tapas bars where locals like to gather with family and friends and where you will taste a selection of 6 – 9 local dishes to share and up to 4 drinks per person (wine, beer, refreshments, water).
10:30pm: after your tapas and wines adventure, be escorted back to your hotel stopping along the way for a sweet local treat.

Along the way you will visit the Church of El Salvador, which is the second largest temple in Seville after the Cathedral, the Basilica de la Macarena with its exquisite sculpture of the Virgin of la Macarena and an artisan workshop dedicated to the decoration of the Easter Week processions. This tour will allow you to learn about the most iconic tradition of Seville and also about the quarters of la Alfalfa, La Encarnación, Feria and San Luis: four different sections of Seville old town with different dynamics, inhabitants, history and architecture. After your explorations of the World Heritage Sites of the city and of the quarter of Triana, this tour will allow you to gain a deeper understanding of the city of Seville and of its particular character.

You will be able to see the city of Cadiz from a unique perspective and also the bay that got its name, with its particular landscape of coastal towns and natural parks. Halfway along the journey, your captain will offer you a drink and some light snacks onboard.

Private culture and gastronomy walking tour of Cadiz old town

10am: be met by your personal local host at your hotel to start a private walking tour of Cádiz old town with a special focus on its history, colonial architecture and gastronomy.
Founded by the Phoenicians in the 11th century BC, the city of Cádiz has amazing surprises to offer to the adventurous traveler with a thirst for culture and gastronomy discoveries. You will start this tour seeing incredibly well preserved evidences of the Phoenician past of the city. This will allow you to understand who the Phoenicians were, where they came from, why the based themselves in Cadiz and the impact that their arrival had in the present gastronomy and wines of Southern Spain. Later, you will travel forward in time to the 18th century, when the city held the monopoly of all trade with the Americas, formerly established in Seville. The bourgeoisie that settled down in Cádiz in this period transformed the city completely into a refined and cosmopolitan colonial hub. These new inhabitants commissioned the construction of very impressive civil and religious buildings to prove their financial status. You will be taken to visit some hand-picked ones, to later understand that these merchants brought to Cádiz not only material wealth, but also new ideas and new foods from the New World, that slowly transformed the local gastronomy making it more and more diverse.
After this introduction and surely hungry, you will be taken on a gastronomy tour of the city including tastings of selected local produce in the local market, a stop in a selected local tavern where you’ll be introduced to the famous fortified wines that traveled from Cadiz to America, a tapas lunch in a local family-run and family-owned bar and a coffee with a sweet local specialty in a historical café to finish.

Spanish food and wine workshop in Rota with transportation by ferry boat

10am: be met by your personal local host at your hotel and walk to the port to catch together a ferry to the coastal town of Rota.
10:20: arrival to the port to get ready to embark the ferry.
10:40: departure of the ferry from Cádiz port towards Rota. Explanations along the way about the towns and villages that populate the perimeter of the bay of Cádiz.
11:30am: arrival of the ferry to Rota and private introductory tour of the village with a special focus on its agriculture and fishing industries, finishing in the house of your local cooking instructors.
12:15pm: arrival to the house of your local cooking instructors (a mother and a daughter who love and live for cooking). Welcome drink and tapas and start of your cooking lesson.

From Cadiz to Arcos de la Frontera visiting a private farm of brave bulls and a Sherry vineyard with lunch there along the way

9:15am: meet your personal local host at your hotel and be transferred in a modern and comfortable Mercedes minivan with a dedicated driver to a selected farm of brave bulls in the countryside outside Jerez.
10am: upon arrival to the farm, be welcome by the owner who will show you first the family estate while giving you an introduction about the history of breeding brave bulls and Spanish pure-bred horses in the family. Then it will be time to get on a 4 x 4 vehicle to go and explore the areas where their brave bulls are bred. Along the journey you will learn about the art of breeding brave bulls. From the selection of the mother cows and breeding bulls, to the identification of the characteristics that are demanded
by different bullrings in Spain for the bullfights. Then you will learn what being a farmer of brave bulls is like in the middle of the 21st century. After seeing the bulls in their natural habitat and learning about them, you will be shown the family horses, which are used by the family for special traditional events and festivities.
11:45am: back at the house of the family, you will be invited to have a coffee or tea with the owner and ask as many questions as you like in a more intimate environment.
12:15pm: end of the visit to the farm and private transfer to a selected nearby sherry vineyard.
12:45pm: upon arrival to the vineyard be met by the owner to later take a walking tour of his vineyard aimed at understanding the particularities of the soil, of the climate, of the vines and of the grapes that make Sherry so unique. This will be followed by a tasting of the sherries that the owner makes and ages only for him and his family. This will be accompanied by a selection of tapas.
2:15pm: then, you will be called for a homemade lunch in the vineyard house of the owner including starters, mains, desserts and sherry.

Along the way you will be explained about rural life in Southernmost Spain and about its artisanal producers, before meeting some selected ones yourself!
9:45am: arrival to the traditional olive oil mill. Meeting with the owner and explanation of how they make their olive oil, with olives coming from both the surrounding groves and wild olive trees. Tasting of their olive oil at the end of the visit.
11am: private transfer from the olive oil mill to the farm of a salt producer where everything has been done manually since the Roman times.
11:15am: arrival to the farm of the salt producer and private tour of the area where he has a natural salt water spring and the facilities that he uses to extract the salt from this water. These facilities have been used since the Roman times and the family who owns them now still follows the same ancient methods to extract the salt. You will learn about them and about the different types of salt that they produce.
12:15pm: private transfer from the salt farm to the farm of a local goat shepherd.
12:45pm: arrival to the farm, meeting with the shepherd, understanding of his very artisanal approach to cheese making and tasting of selected cheeses in the farm with him.

Visiting the Genal Valley with an immersion into the life of one of its villages
–
10:30am: meet your personal local host at your accommodation and be transferred in a modern and comfortable Mercedes vehicle to the village of Benalauría, in the heart of the Genal Valley. Along the way you will be explained about the geography, economy, lifestyle, history and customs of this unspoilt valley in the province of Málaga.
11am: upon arrival to Benalauría, you will be dropped off at the top of the village, to enjoy some beautiful views of its whitewashed houses and of the lush nature that surrounds them. Then it will be time to make your way down to the centre of the town, where you will have an immersion into its present culture and lifestyle through visiting some selected local spots and meeting the local community.
Your first stop will take you to the old local mill (not in use anymore), where you will understand how the local chestnut wood and stone allowed for the consruction of very robust houses and local infrastructures until the late 20th century. The old mill is in an excellent state of conservation and the local population has donated several old artifacts to create a little exhibition space representing its roots and ancient industries.
Your second stop will be the local bakery, founded in the 19th century by the same family who owns it today and where bread and cakes are still made following traditional recipes. At the bakery, you will meet the owners, learn about their business and about the important proximity service they operate for the local population as well as for the surrounding towns.
Your third stop will take you to the winery of a small local winemaker. There you will learn how the Genal Valley had a thriving wine industry until a devastating pest arrived in the late 19th century. Slowly, more than 100 years later, this wine scene is having a comeback and this winemaker is one of the pioneers in the recovery. At the winery you will enjoy a tasting of his red and white wines as well as a local pairing lunch cooked by his wife. This will be the icing on the cake for your immersion into the life of a remote mountain village in South West Spain.

9:45am: start your private walking tour of the Alhambra and el Generalife. This tour will allow you to enjoy the exquisite refinement of the most splendorous construction that the Muslims built in Spain: the Alhambra. The Alhambra was a palatial town, formed by different parts, all of which you will get to discover with your local host in order to understand how they all worked together, the role that each of them had and the different people who inhabited them. After your tour of the Alhambra you will be taken to the Generalife or summer palace of the Nasrid Sultans, where they would go to get away from the hustle of life in the Alhambra. The Generalife is a magical place designed for relax and contemplation and its gardens, architecture and views are simply spectacular.

10am: be met by your personal local host by the reception desk of your hotel to go on a 3h walking tour of Granada old town that will allow you to get familiar with two important and iconic quarters of the city.
You will start your tour by visiting the first quarters that developed in Granada after the Christian conquest of the city in 1492. It is in these areas where the Cathedral of Granada was erected and in one of its chapels, the so-called Royal Chapel, you will visit the tombs of the monarchs that were responsible for the conquest of the city (Isabel of Castille and Ferdinand of Aragón). Their tombs are an exquisite sample of Spanish renaissance sculpture. Near this chapel, you will also visit the palace of la Madraza: a unique building that originally was a medieval Quran School and that later was used as a noble residence. During your visit, you will see beautiful evidence of its original use and of the one that followed.
Later, you will be taken to the lower part of the iconic quarter of el Albayzín, located on top of a hill and overlooking the Alhambra. El Albayzín was the part of Granada where regular people would live. People whose social scheme inside the walls of the palatial areas of the Alhambra was rather unclear. The quarter of Albayzín is a UNESCO site and it treasures some of the most beautiful corners that the city of Granada has to offer. Your local host will share the most special ones with you, while you are explained about the architecture and infrastructures that the quarter had in the medieval times and of which you will see beautifully preserved evidence. You will also be given recommendations for the best spots of the upper part of the quarter to watch the sunset from.

Córdoba is a unique city, which features probably the most thought-provoking building in Spain: the Mosque-Cathedral. Your tour will allow you to understand the origins of this building and also the historical circumstances that led to three important enlargements during the period of the caliphate and to the construction of a catholic cathedral inside it, after the Christian conquest of the city.
Visiting the Mosque will also give you an understanding of the refinement that the Omeya dinasty brought to Spain and of how they turned the city of Córdoba into one of the most populated, developed and wealthy cities in medieval Europe.

Private walking tour of Córdoba beyond the Great Mosque Cathedral

10am: be met by your personal local host at your hotel to start a private walking tour of Córdoba old town including the Jewish quarter with the synagogue, the chapel of Saint Bartholomew and the Alcazar of the Christian Monarchs.
This tour will allow you to discover the Roman origins of the city and also how, during the middle ages, it saw the peaceful interaction between the three great Mediterranean cultures. Jews, Muslims and Christians coexisted then in the city turning it into a unique intellectual hub that gave birth to very renowned philosophers, poets, scientists and doctors. During your private walking tour, you’ll learn about the history of the city focusing on its period of maximum intellectual splendour, while you visit the synagogue, the Mudejar Chapel of Saint Bartholomew and the Alcazar of the Christian Monarchs, which features probably the most beautiful gardens in the city.
12pm: end of your tour and rest of the day at leisure.

Private transportation service to travel from Córdoba to Medina Azahara to take a private walking tour of the site and to the castle of Almodóvar (self-guided)

10am: be met by your personal driver at your hotel and be transferred in a modern and comfortable Mercedes minivan to the archaeological site of Medina Azahara.
10:25am: upon arrival to Medina-Azahara, meet your personal local host and start a private walking tour of the site to understand the massive palatial complex that it once was, the different parts it featured, their functions, the relationships between the people who inhabited it, its defensive system, the political roled it played during the caliphate of Córdoba and the reasons that led to its decay and abandonment.
12:30pm: reconnect with your driver and be transferred to the castle of Almodovar.
1pm: arrival to the castle of Almodovar and free time for a self-guided visit of the site.
2pm: end of your visit to the castle of Almodovar and free time in the village of Almodovar del río for lunch.

Confirmation and payments
In order to confirm this tour program we require a 30% deposit of the grand total no later than the 25th of August 2021 via credit/debit card. The remaining 70% must be paid via the same method no later than 30 days prior to the start of the tour program.

Cancellation policy
– If you cancelled your tour program more than 30 days prior to its start: we’d charge the 30% deposit only.
– If you cancelled your tour program between 30 and 15 days prior to its start: we’d charge 50% of the full cost of the tour program.
– If you cancelled your tour program between 15 and 8 days prior to its start: we’d charge 75% of the full cost of the tour program.
– If you cancelled your tour program 7 days or less prior to its start: we’d charge 100% of the full cost of the tour program.
